Малосольный сыр размять и перемешать с маслом и белком. Пшеничную муку просеять и смешать с питьевой содой, затем насыпать на чистую доску холмиком и сделать посередине углубление. Положить туда мацони, яйцо, сливочное масло и замесить тесто. Готовое тесто разделить на 2 или 4 части, раскатать тонкие круглые лепешки и ровным слоем положить приготовленный сыр, защипав края теста либо наглухо (так, чтобы сырная начинка оказалась внутри), либо наподобие ватрушки. Выпекать в духовке.

Продукты
Для теста:
мацони 1 стакан
желток 1 шт.
масло сливочное 100 г
сода 0.5 ч. ложки
мука пшеничная 3 стакана
Для начинки:
сыр 500 г
белок 1 шт.
масло сливочное 30-50 г
